Inspiration for Chefs from Gressingham Foods at UCFF

Speciality duck producer Gressingham Foods is offering chefs visiting the Universal Cookery and Food Festival (UCFF) a free Menu Consultation, to help them maximise the opportunities to increase demand for premium duck dishes.

Gressingham’s foodservice specialists will be on-stand at the show, taking place on  September 16, 2025, at Tewinbury Farm, Herts, to offer practical advice and recipe ideas to chefs. Visitors to the Gressingham stand will also be entered into a competition to win a Gressingham Duck Hamper.

There will also be an opportunity to sample Gressingham’s two new sous vide products, duck breast and confit duck leg, which enable operators to add a range of popular and profitable dishes, as well as new smoked duck breast, ideal with salads and as a festive menu starter.

Rebecca Alderton, marketing manager of East Anglia-based Gressingham Foods, says: “Our new products make it as easy as possible for chefs to prepare and serve popular duck dishes. With consumers looking for more interesting menus when they eat out, we’re offering our free consultations to help chefs fully appreciate the versatility of duck.

Alderton adds: “Duck is versatile and tasty. It has a healthy fat-to-meat ratio and is sustainable not only in the way it’s reared on our Red Tractor farms, in airy barns with access to fresh air and light, but also in reducing food waste, as the whole bird can be used right across the menu.

“Duck adds ‘wow factor’ to menus as it’s something consumers are less likely to have prepared and cooked at home, but that puts an added onus on chefs to offer dishes that are genuinely special. We’re looking forward to meeting both existing and new customers at UCFF.”
